Free a Pumpkin... Changed a Life!

Recently, my bestie went to Kroger and discovered that they were giving away free pumpkins after Halloween. Naturally, she thought of me. I'm not quite sure why, because I've never had pumpkin in my life! I don't talk about it and I don't think about it. I've never even had a pumpkin latte (gasp). Even still, she said she knew I could come up with some creative ways to cook it. She was right! lol
Upon my journey to pumpkin, I did what any person would do... I Googled and Pinterested the heck outta the key words "pumpkin recipes." I found a lot of pie recipes, but sweets aren't really my thing. So I ended up preparing a few different, savory recipes (Pumpkin lasagna roll ups, Pumpkin & Kale Baked Pasta, Pumpkin quesadilla, Pepitos, Pumpkin cheesecake, and, of course, Pumpkin pie!) It was a lot of fun, but let me be the first to tell you, PUMPKIN is A LOT of work. It took me a couple of days to prep it. One doesn't just cook pumpkin... You must roast it, peel it, puree it AND THEN cook it into your recipes. whew! I was not ready! When it was all said and done, I would definitely do it again NEXT year when the pumpkins are free and plentiful. The one thing that changed my life about eating pumpkin is this:
PUMPKINS WILL MAKE YOU REGULAR!!! (flush, flush if you know what I means)
